The purpose of this experiment was to find out whether the new vegetable cellulose-based capsules would dissolve differently than the long existing animal gelatin-based capsules. This experiment was conducted to test the effects of two variables, temperature and pH, on both types of capsules. The experiment tested the dissolution of both capsules in liquid at three different temperatures and three different pH levels, including body temperature and the normal stomach acid pH. The capsules were filled with red Jell-O crystals, and the time to the release of red color from the filled capsules was measured. The data indicates that the dissolution is dependent upon temperature and independent of the pH level in both types of capsules. There was significantly faster dissolution as the temperature of the liquids was increased, but there is little difference between different pHs at the same temperature. In addition, the vegetable capsules are less variable at different temperatures that the gelatin capsules. The data shows that people can take the vegetable capsules without worrying about their ingredients or their effectiveness.
